5 cloves garlic, minced
1 banana heart, sliced (optional)
1 bundle string beans (sitaw), cut into 2-inch pieces
1 medium eggplant, sliced
1 bundle bok choy or pechay
1 cup peanut butter (creamy or chunky, depending on preference)
¼ cup ground roasted peanuts (for added flavor)
2 tbsp toasted rice flour (for thickening)
8 cups water or beef broth
2 tbsp cooking oil
Salt and pepper, to taste
Bagoong alamang (shrimp paste), for serving

    In a large pot, boil oxtail in water for about 1.5–2 hours or until tender. Skim off any scum that rises to the surface. For faster cooking, you can use a pressure cooker (45–50 minutes).

    Soak annatto seeds in warm water until the liquid turns bright red-orange. Strain and set aside. This will give Kare-Kare its signature golden color.

  4. Build the Peanut Sauce
