Ramadan Recipes: Shiro Wot

Shiro wot is an Ethiopian-Eritrean stew that is opular during Ramadan. This vegetarian and high protein dish is made with chickpea flour, onions and berbere spice.

- 140g chickpea flour
- 2 medium onions - mashed
- 4 tablespoons vegetable oil
- 1 tomato - chopped
- 5 cloves garlic - chopped
- 2 tablespoons niter kibbeh (Ethiopian spicy clarified butter)
- 2 cloves
- 2½ cups vegetable broth
- 3 tablespoons berbere
- ½ teaspoon beso bela (Ethiopian holy basil)
- 1 teaspoon garlic powder
- ¼ teaspoon sugar
- Salt
- 1 chilli pepper

- Sauté onions
تم نسخ الرابطAdd the mashed onions to a Dutch oven over medium heat and sauté for about 5 minutes. Add the oil, and cloves, and stir for 2 minutes.
- Add tomato and spices
تم نسخ الرابطAdd the chopped tomato, beso bela, berbere, niter kibbeh, garlic powder, sugar, salt to taste, and garlic and sauté for another 3 minutes.
- Add chickpea flour
تم نسخ الرابطAdd half the chickpea flour and add 1 cup of vegetable broth, stirring constantly until it's smooth. Then add the other half of the chickpea flour and 1 cup of broth, and stir again. Add the remaining and stir.
- Cook the stew
تم نسخ الرابطSimmer over low heat for about 5 to 10 minutes until the fat separates slightly from the shiro.
- Serve
